There’s something incredibly comforting about the smell of warm spices filling the kitchen. It’s one of those aromas that instantly makes a house feel like home.

I originally created this cake for the holiday season, but after making it again and again, I realized it deserved a place on my baking list all year round. The soft cake paired with whipped cream cheese frosting is one of those classic combinations that never gets old.

What I love most about this recipe is how simple it is. There are no complicated techniques or specialty ingredients just pantry staples transformed into a bakery-worthy layer cake. Spice Cake Ingredients

  • Milk: Provides moisture and richness, helping dissolve sugar and activate gluten for structure. 
  • Lemon Juice: Adds acidity, which reacts with baking soda to create leavening gas and lighten the texture. 
  • Light Brown Sugar: Adds mild sweetness and a hint of caramel flavor, keeping the cake moist and tender.
  • Cane Sugar or Castor Sugar: Sweetens the cake while also contributing to its moistness by attracting and retaining water. It aids in caramelization and Maillard reactions, giving the cake a golden color and depth of flavor.
  • Oil: Provides fat that tenderizes the cake by coating flour proteins, reducing gluten formation. It also stays liquid at room temperature, which keeps the crumb soft and moist longer than butter would.
  • Vanilla Extract: Adds a sweet, warm aroma that enhances the overall flavor and brings out the cake’s richness.
  • All-Purpose Flour: Flour supplies the necessary starch and protein to create the cake’s structure through gluten development.

  • Powdered Sugar: Sweetens the frosting while keeping it smooth and fluffy. Sift before using for the best texture.
  • Heavy Whipping Cream: Whips into a light, airy frosting. For a dairy-free option, use Silk Dairy-Free Heavy Whipping Cream Alternative, Country Crock Plant Cream, or Let’s Do Organic Heavy Coconut Cream (well chilled).
  • Vanilla Extract: Enhances the flavor and adds warmth to the frosting.
  • Ground Cinnamon (Optional): Adds a subtle warmth and pairs beautifully with the spiced cake.

How to Make Spice Cake 

Preheat the oven to 350°F (175°C). Lightly grease and line three 8-inch (20 cm) round cake pans with parchment paper.

In a large mixing bowl, whisk together the milk, lemon juice, oil, vanilla extract, light brown sugar, and cane sugar until well combined.

Sift in the flour, baking powder, baking soda, allspice mix and salt. Whisk until the batter is smooth and lump-free. Do not overmix.

Divide the batter evenly between the prepared pans and bake for 25–30 minutes, or until the tops spring back when lightly touched or a toothpick inserted into the center comes out clean.

How to Make Cream Cheese Frosting

Prepare your equipment. In a large mixing bowl, use either a stand mixer with the paddle attachment or a handheld electric mixer. Add the cold cream cheese and beat briefly until slightly softened without any lumps.

Gradually add the sifted powdered sugar in two additions. Mix on medium speed until the mixture becomes smooth and light, about 4–5 minutes.

Incorporate remaining ingredients. Add the cold whipping cream, vanilla extract, and cinnamon powder. Whip the frosting. Continue mixing until the frosting is fully combined, smooth, and holds soft peaks.

How to Assemble the Spice Cake

Spread a small dollop of cream cheese frosting onto your cake stand or serving plate to secure the first cake layer.

Place the first cake layer on the stand and spread 5-6 scoops of cream cheese frosting evenly over the top using an offset spatula. Add the second cake layer and repeat with another 5-6 scoops of frosting, spreading it into an even layer.

Place the final cake layer on top, gently pressing down to level the cake. Apply a thin crumb coat of frosting over the top and sides, then refrigerate for 30 minutes until firm. Cover the cake with the remaining cream cheese frosting, smoothing the top and sides with an offset spatula or cake scraper.

Transfer any remaining frosting to a piping bag fitted with a star tip and pipe swirls or a border around the top of the cake. Refrigerate for 30 minutes before slicing for the cleanest cuts.

Homemade Spice Blend (optional for 1 tbsp spice mix)

  • 2 tsp Cinnamon Powder
  • 1/4 tsp Nutmeg Powder
  • 1/4 tsp Ginger Powder
  • 1/4 tsp Clover Powder
  • 1/4 tsp Cardamom Powder

Spice Cake Layers

  • 480 ml Milk* room temperature; see notes for options
  • 1+1/2 tbsp Lemon Juice or white vinegar
  • 220 g Light Brown Sugar
  • 50 g Cane Sugar or castor sugar
  • 2 tsp Vanilla Extract
  • 85 ml Oil vegetable or any neutral oil
  • 340 g All Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2-3 tsp All Spice Mix Powder or ground chai spice powder / cinnamon powder
  • 1/4 tsp Salt
  • 2 tbsp Unsulphured Molasses Syrup optional

Cream Cheese Frosting

  • 340 g Cream Cheese cold; see notes for options
  • 150 g Powdered Sugar or icing sugar
  • 270 ml Whipping Cream cold; see notes for options
  • 2 tsp Vanilla Extract
  • 1/2 tsp Cinnamon Powder optional

Instructions

For Spice Cake

  • Preheat the oven to 350°F(175°C).
  • Lightly grease three 8-inch(20 cm) round cake pans with oil and line the bottoms with baking paper.
  • In a large mixing bowl, whisk together the milk and lemon juice and let it sit for 10 minutes until slightly curdled.
  • Add the oil, vanilla extract, light brown sugar and cane sugar then mix until the sugar is fully dissolved.
  • Sift in the flour, baking powder, baking soda, spice mix powder, and salt. Stir until the batter is smooth and free of lumps.
  • Mix Molasses syrup if using.
  • Pour the batter evenly into the prepared pans. Bake for 25 to 30 minutes, or until the tops are set and spring back when gently pressed.
  • Allow the cake layers to cool completely on a wire rack.

For Cream Cheese Frosting

  • In a large mixing bowl, use either a stand mixer fitted with whisk attachment or use a handheld electric whisk.
  • Add the cold cream cheese and beat briefly to soften and make it smooth. Scrape down the sides with a spatula.
  • Gradually add the sifted powdered sugar in two additions, mixing on medium speed until the mixture is smooth and light, about 2 minutes.
  • Add the cold whipping cream, vanilla extract, and cinnamon powder(optional). Continue mixing until the frosting is fully combined, smooth, and holds medium peaks. 

Cake Assembly

  • Place the first cake layer onto the prepared stand or plate.
  • Add 6-7 scoops of cream cheese frosting on top and spread it evenly with an offset spatula.
  • Gently place the second cake layer on top of the frosted layer. Repeat the frosting step, add 6-7 scoops and spread evenly.
  • Add the final cake layer on top, pressing down gently to align and secure the stack.
  • Apply a thin layer of frosting over the entire cake to trap crumbs and create a smooth base. Chill the cake in the refrigerator for about 30 minutes to set.
  • Once the crumb coat has firmed up, apply a thicker, even layer of frosting.
  • Fill a piping bag fitted with a round nozzle with the remaining frosting and pipe dollops or borders on the top and sides of the cake. Dust cinnamon sugar if desired.
  • Refrigerate the finished cake for at least 30 minutes to allow the frosting to set and make slicing easier.

Notes

Cup vs weighing scale: The US customary cup measurement serves as a rough estimate, as it can have uncertainties, so for precise results, it's recommended to weigh your ingredients using a digital scale in grams.

Milk: Use unsweetened  dairy-free milk such as almond / oat / soy or any whole milk of your choice.
Whipping Cream: Use dairy-free whipping cream such as califia farms / country crock or any regular unsweetened whipping cream of your choice.
Sugar: Cane sugar can be substituted with granulated sugar or castor sugar. Ensure the sugar is vegan-friendly (some sugars are processed with bone char) or use organic cane sugar.
Cream Cheese: Use dairy-free cream cheese or any plain full fat cream cheese of your choice.

    wonderful recipe , baked it today. it came out very well and tastes amazing , I did not add the molases
    I made the frosting as well but the decoration we did was a disaster my boys helped me decorate and had a good laugh , I have to learn to decorate, nevertheless yummy cake I used 20cm two pans
    I have tried a couple of your recipes and every time it turns out yummy

    Wonderful recipe! Turned out perfectly! I made this cake for my daughter in laws 50th surprise birthday party. Everyone loved it. Many said it was the best cake they ever had – vegans and non vegans alike. I added a few more spices to make it a spice cake (her favourite). I also substituted the frosting. I wasn’t sure how the frosting with the recipe would travel or sit out for a few hours. I substituted a vegan cream cheese frosting recipe still adding cinnamon and cinnamon extract. I made 3 x the recipe in 3 – 9 x 13 pans.
