Some cakes are simple, and then there are cakes that instantly become the centerpiece of the dessert table. This Chocolate Oreo Cake definitely falls into the second category.
Whenever I’m baking for a birthday or a special celebration, I always find myself coming back to this recipe. It has everything you could want in a celebration cake soft chocolate cake, fluffy Oreo frosting, rich chocolate ganache, and plenty of Oreo cookies. It looks impressive, but every layer comes together with simple ingredients and techniques.
My favorite part is the frosting. Instead of a heavy buttercream, I use a light whipped cream cheese frosting loaded with crushed Oreos. It keeps the cake light and creamy while letting the rich chocolate flavor shine. Paired with silky chocolate ganache, every bite has the perfect balance of chocolate, cream, and crunchy Oreo cookies And since it’s completely eggless with an easy dairy-free option, everyone can enjoy a slice.
Preheat the oven to 350°F (175°C). Grease and line three 8-inch cake pans with baking paper. Combine milk and vinegar in a bowl and let sit for 5 minutes to create a buttermilk substitute. Add sugar, oil, and vanilla extract, then whisk until smooth.
Sift together flour, cocoa powder, baking soda, baking powder, and salt. Add the dry ingredients to the wet mixture and whisk until combined. Pour in hot coffee or boiling water and mix until smooth.
Divide the batter evenly between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.
Crush the Oreos into fine crumbs using a food processor.
Beat the cold cream cheese until smooth. Add the powdered sugar and vanilla, mixing until creamy. Gradually pour in the cold whipping cream and beat until the frosting reaches medium peaks. Fold in the crushed Oreos and refrigerate until ready to use.
Heat the heavy whipping cream in a saucepan until it just begins to simmer. Pour it over the chocolate and let it sit for 1–2 minutes. Stir until the ganache is smooth and glossy.
If needed, strain the ganache for an extra silky finish. Cover the surface with plastic wrap and let it cool until spreadable, about 6 hours at room temperature or 2–3 hours in the refrigerator.
Place one cake layer on a cake stand. Spread a thin layer of chocolate ganache over the cake, then top with a generous layer of Oreo whipped cream cheese frosting. Repeat with the remaining cake layers.
Apply a thin crumb coat and chill for 20–30 minutes. Frost the cake with the remaining Oreo frosting, then pour the cooled chocolate ganache over the top to create beautiful drips. Decorate with Oreo frosting swirls, Oreos, crushed Oreos, chocolate ganache, and chocolate shavings. Chill for 30 minutes before slicing.
