The Best Chocolate Chunk Cookie – (eggless with dairy-free option)

I’ve always loved a good cookie, especially one that’s warm and fresh from the oven. After working as a pastry chef, I’ve definitely had my share of bakery and coffee shop cookies, but there’s still something special about a homemade batch.

These Chocolate Chunk Cookies have crisp edges and a soft, chewy center, so they check a lot of boxes for what makes a really good cookie. They’re packed with chocolate chunks, completely eggless, and can easily be made dairy-free.

And yes, I’m one of those people who has a hard time waiting for cookies to cool. There’s just something about a warm cookie with melty chocolate that makes it impossible to resist.

Ingredients for Chocolate Chunk Cookies(eggless):

  • Butter: Adds richness, flavor, and helps create crisp edges with a soft, chewy center. Dairy-free option: Country Crock Plant Butter, Miyoko’s Plant Milk Butter, or Earth Balance Buttery Sticks.
  • Light Brown Sugar: Adds sweetness, moisture, and a subtle caramel flavor that helps keep the cookies chewy.
  • Plain Yogurt or Milk: Keeps the cookies soft and replaces the moisture eggs would normally provide. Use plain, unsweetened dairy-free yogurt or plant-based milk for a dairy-free option.
  • Vanilla Extract: Adds warmth and enhances the chocolate flavor.
  • All-Purpose Flour: Provides structure while keeping the cookies tender and chewy.
  • Baking Soda: Helps the cookies spread and creates lightly crisp edges.
  • Salt: Balances the sweetness and brings out the chocolate flavor.
  • Chocolate Chunks: Create those delicious pools of melted chocolate throughout the cookies. I prefer dark chocolate chunks, but use your favorite chocolate.
  • Sea Salt (Optional): A sprinkle on top adds a nice contrast to the sweetness and makes the chocolate flavor pop.

How to Make Chocolate Chunk Cookies?

Cream Butter and Sugar:

In a mixing bowl, beat the butter with an electric whisk until it becomes soft and smooth. Add the light brown sugar and continue mixing for 2-3 minutes until the mixture is pale and fluffy.

Next, add the plain yogurt or milk, vanilla and whisk until creamy, scraping down the sides of the bowl to ensure there are no lumps.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the butter mixture, mixing on low speed until a cookie dough forms. Fold in most of the chocolate chunks, reserving about ¼ cup for topping.

Shape and Bake the Cookies:

Cover the bowl with plastic wrap and let the cookie dough rest at room temperature for 30-45 minutes. Meanwhile, preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

Use a 2-tablespoon cookie scoop to portion the dough, placing each dough ball about 3 inches apart on the prepared baking sheets. Press a few chocolate chunks on top of each dough ball, if desired.

Bake the cookies for 10-12 minutes, then use a round cookie cutter to gently shape them while still warm. Sprinkle with sea salt, if desired, and allow the cookies to cool.

What Makes These Different from Chocolate Chip Cookies?

Unlike regular chocolate chip cookies, chocolate chunk cookies use larger, uneven pieces of chocolate, which melt more fully and create a rich, chocolatey texture throughout the cookie. This approach gives a different mouthfeel, with gooey pools of chocolate in every bite rather than smaller, evenly distributed chips. Either or are amazing but something about a freshly baked chocolate chunk cookie hits differently!

Tips to Make The Best Chocolate Chunk Cookies (eggless):

  • Use Room Temperature Butter: It should not be too soft or too cold. Butter blends easily with other ingredients, creating a smooth and even dough for the best texture.
  • Let the Dough Rest: Resting the cookie dough for 30–45 minutes allows the fats to solidify and the flour to hydrate, which enhances flavor and prevents excess spreading during baking.
  • Choose Quality Chocolate: Opt for semi-sweet or dark chocolate chunks or a high-quality chocolate bar cut into pieces for gooey, rich bites in every cookie.
  • Portion Dough Evenly: Use a cookie scoop, measuring spoon, or digital scale (about 40g per cookie) to ensure uniform cookie sizes for even baking.
  • Space Cookies Properly: Leave at least 3 inches between each cookie on the baking sheet to prevent merging while baking and allow for proper spreading.
  • Bake Until Edges Are Golden: Don’t overbake! Check your cookies a minute or two before the suggested time. The edges should be lightly golden while the centers remain soft.
  • Cool Before Moving: Let cookies cool on the baking sheet for 10 minutes before transferring to a wire rack. This helps them set properly and prevents breakage.

  • Serve warm with ice cream.

Notes

  • Cup vs weighing scale: The US customary cup measurement serves as a rough estimate, as it can have uncertainties, so for precise results, it's recommended to weigh your ingredients using a digital scale in grams.
  • Before you start to make any recipe, measure and prepare your ingredients so the process will go smoothly and easily.
  • For teaspoon (tsp) and tablespoon (tbsp) measurements, please use measuring spoons and not the type of spoons you eat with for accuracy.
  • Milk: You can use any dairy-free unsweetened milk (like almond, soy, oat) or dairy-based whole milk
  • Butter: Dairy-free butter sticks or any butter of your choice
  • Chocolate: Use dark or semi-sweet chocolate chunks / a good quality 60% chocolate bar cut in chunks. For the vegan version, use dark chocolate of any dairy-free chocolate brand (make sure it doesn't contain milk solids or butter) but cocoa butter is totally fine.
  • Plain Yogurt: Dairy-free unsweetened yogurt, or any plain Greek yogurt of your choice

These cookies are absolutely delicious! This will be my go to chocolate chip cookie recipe from now own! ❤️
I used chocolate chips instead of chunks because that’s what I had. I also chilled the dough in the refrigerator for 45 mins instead of resting on the counter, which works every time to avoid spreading. One small note: I believe you left out the vanilla in step 3 of your instructions.

  2. Hi
I have been trying your recipes & they turn out super 👌

But with these cookies, the taste & texture was very nice but it didn’t get the color it should have…they were whitish
can I know where could I have gone wrong ??

    1. Hi Sheela

I’m so happy to hear you’ve been enjoying the recipes—thank you so much for trying them out! 👩‍🍳💕
About the cookies—if they turned out a bit whitish, it could be due to the oven temperature. Make sure it’s fully preheated, and if possible, use an oven thermometer to check for accuracy. You can also try baking at a slightly higher temperature for a shorter time, or at a lower temperature for longer—both methods affect browning differently.

Also, cookie thickness can play a role—thinner cookies tend to brown more evenly. Hope this helps! Let me know how it goes if you give them another try 😊🍪

  3. I had a question. You have mentioned the cookie dough needs to rest at room temperature. Is that universal all depends on climate? If I stay in a warm country, is it advisable to refrigerate instead of room temperature?

    1. Hi Rucha

You can rest portioned or scooped cookie dough in the fridge. That works too. On some occasions chilled cookie dough might bake thicker, if you wish you can bring the dough to room temperature before baking.
