Carrot cake has always been one of those cakes I come back to, especially when I’m craving something cozy but not overly sweet. For this version, I wanted to add coconut without taking away from the classic carrot cake flavors I love.
This eggless Coconut Carrot Cake is soft, moist and warmly spiced with cinnamon, made with freshly grated carrots and layered with a creamy coconut cream cheese frosting. The coconut adds just enough flavor and texture to make the cake feel a little different, while the tangy cream cheese frosting balances everything beautifully.
It’s the kind of cake that works just as well for a birthday or celebration as it does for a weekend baking project. And if you’re a carrot cake fan, I think you’ll love this little twist.
For this recipe, I use sweetened shredded coconut in the cream cheese frosting and for decoration. It adds a little sweetness and coconut flavor, along with some texture that makes the frosting especially good with the spiced carrot cake.
Preheat the oven to 350°F (175°C). Grease two 8-inch (20 cm) round cake pans and line the bottoms with parchment paper. Peel and finely grate the carrots using a box grater or food processor.
If using carrots with high water content, squeeze out the excess moisture before measuring. Regular orange grocery-store carrots generally do not need to be squeezed.
In a large bowl, whisk together the milk, oil, vanilla, light brown sugar, and caster sugar until well combined. Add the flour, baking powder, baking soda, cinnamon, and salt, and mix just until incorporated. Fold in the grated carrots and toasted chopped walnuts, if using.
Divide the batter evenly between the prepared pans. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
Add cream cheese to a mixing bowl fitted with a paddle attachment, or use a handheld electric whisk. Beat on medium speed until smooth, scraping down the bowl as needed.
Add butter and mix until smooth and fully combined. Gradually add powdered sugar in 2 additions, mixing on low speed, then increase to medium and beat until light and fluffy. Add vanilla and mix briefly to combine. If the frosting is too soft, refrigerate briefly before using.
Absolutely. Toasted pecans are a great substitute for walnuts in this cake.
Yes. Add them according to your preference, but keep in mind that they will add extra sweetness and texture.
Yes. The cake layers can be baked a day or two ahead and stored well wrapped. You can also assemble and frost the cake a day before serving and keep it refrigerated.
Chill the cake until the frosting is firm. Run a sharp serrated knife under hot water, then dry it completely. Use a gentle sawing motion to cut through the cake rather than pressing down. Wipe the knife clean and repeat between slices.
Store it in the fridge for up to 5 days. For the best texture, let the cake sit at room temperature for about 10–15 minutes before serving.
