I loved everything about this, The instructions are clear and simple. the pictures are beautiful. and the recipes are delicious. I preordered this book after following the author on Instagram, and got it the same day it released. Hi, I’m Saloni. I’ve been a vegetarian since birth, so transitioning into vegan baking felt like a natural choice for me. I believe there is so much potential and creativity in the world of vegan food. However, I often come across vegan recipes that require unusual or expensive ingredients that are hard to find, or they end up tasting too strongly of applesauce, tofu, or flaxseed! That’s why I set out to create 60 simple, delicious, and easy-to-follow recipes that focus on three key principles: vegan, simple, and indulgent. Most of my recipes use basic ingredients like vegan milk, sugar, flour, and oil or vegan butter. I love to stick to classic baking methods, while swapping out dairy and animal products for plant-based alternatives.

 

In my day-to-day life, I focus on practical and approachable habits, and this naturally extends to my cooking and baking. My goal is to simplify baking by using budget-friendly and accessible vegan ingredients without sacrificing flavor or quality. Baking on a budget doesn’t mean you have to “go cheap” or give up things you love. Instead, it’s about getting what you love at a better price and making the most of your resources. For example, I buy blueberries in bulk, eat them fresh, and freeze the rest for future baking. Through this approach, I hope to show my readers how enjoyable and easy vegan baking can be right from their own kitchen.

 

I started my baking career by training at the Institute of Culinary Education and later worked as a pastry sous chef in Dubai. During the pandemic, I launched my Instagram page (@pastrybysaloni) to share my vegan and vegetarian baking recipes, and I also developed a love for food photography. Fast forward two years, and I’ve built an amazing community of foodies and bakers while refining my skills. I hope this book inspires you to bake often and with ease, and that you find joy in these simple, indulgent vegan recipes.
